Spice bundle of love


March marks a couple of feminine-related  happy events in the Middle East! Woman’s day, and mother’s day! it’s the month of spring(officially)… the month of appreciation to that human being who symbolizes the meaning of GIVING! To my mother... aunts… all mothers around  me this simple handicraft is made by your precious little hands, to pamper you on your special month… show them the video… and help them in creating this little spice bindle that will turn your usual cup of tea into a more exciting, and more relaxing one!:) enjoy the video…

Blender limeade…

It’s the flu time of the year! And the monsters are all home today! It’s amazing how they become full of energy once you decide they can rest at home!!! :)
My mama spent her high school years in Egypt… she got us this fabulous recipe from there. I t was our every day juice during childhood days, she always tells me that this juice boosts immunity and reduces the chances of catching flues from other kids at school… it’s so refreshing and cool especially in summery hot days… and preparing it with the whole lime will give it intense flavor.  Prepare it for your kids and enjoy it on a sunny day. You can also freeze it, kids love popsicles, they are always appealing to them!!:)

 4 limes, seeded and sliced
8 tbsp sugar (or more if you wish)

6 tbsp milk

4 cups of cold water
1 cup of ice cubes

Fresh mint & lime slices to garnish

1. Attach the blender to your AVANCE FOOD PROCESSOR from PHILIPS.
2. Place limes, sugar, milk & cold water. Blend for a couple of minutes or till sugar have dissolved.
3. Taste and adjust sugar.
4. Strain the juice and return it back to blender.
5. Add ice, and blend it for another 30 seconds.
6. Pour it into a serving pitcher.
7. Garnish with mint & lime slices.
8. Serve it immediately and enjoy it with your kids.

Tamrieh Bundles…

Tamrieh is an Authentic Palestinian dessert coming from the famous city of Nablus. Originally made with a special dough and deep fried.  When I made it the traditional way, it took quite some time, plus the guilt feeling whenever I deep fry anything to my family! I used spring roll wraps this time… it was so crunchy and took absolutely no time to prepare!  Teta (grandma) used to prepare it for us in Ramadan as a treat for fasting all day long :) this particular recipe became one of my little family’s favorite desserts… and with PHILIPS AIRFRYER we enjoy it all year long :)


2 ½ cups milk
½ cup sugar
½ cup semolina
¼ tsp mastic(Arabic gum), ground with some sugar
1 tbsp orange blossom water
Spring roll wraps
Vegetable oil for brushing
Confectioners sugar for dusting


1. To prepare the filling: combine milk, sugar and semolina in a medium sauce pan. Keep stirring over medium heat till it thickens. Add mastic and orange blossom water and pour the mix in a dish to cool.
2. Once cooled, bring one sheet of the spring roll wraps, brush it with some oil. Place another sheet diagonally on top of it, and brush it with oil too.
3. Place one table spoon of the filling right in the center of the brushed wraps.
4. Bring the edges of the wraps up together and squeeze to seal.
5. Place the bundles in your PHILIPS AIRFRYER, and set it on 180°C for 10 minutes.
6. Once done, take them out of the fryer, dust with confectioners sugar and enjoy it crispy and hot.

Potato Stew…

I remembered the first time I cooked after I got married… it was mlukhieh… the famous jute leaves soup… and it took me like four hours to finish!!! Of course in normal conditions it only takes like 45 minutes!! It’s amazing how we evolve! :)
 
As for today’s recipe, it’s considered to be the most basic dish, that almost every mom masters… one of the first recipes my mom taught me to do, and it holds the golden rule of almost all Palestinian stews. Kids just adore it; it can also be pureed if you have a baby who just started on solids…
Usually potatoes cubes are deep fried… but trust me with Philips airfryer this dish will not only get healthier and lighter… but you’ll be able to prepare it in NO TIME! Isn’t it every mom’s dream!:)

To prepare chicken:
500g boneless chicken breasts, cleaned
4 cups water
1 onion, quartered
Little piece of lemon peel
6 cardamom pods
4 pepper corns
3 cloves
1 bay leaf
1 cinnamon stick
½ tsp cardamom powder


1KG potatoes, peeled and cut to medium seized cubes
8 cloves of garlic, crushed
Bunch of fresh coriander, finely chopped
2 tbsp vegetable oil
Salt and pepper to taste




1. In a medium pot, place chicken and water over high heat and wait till boils. Remove any foam that occurs on top of the water. Now turn heat to low, add all other ingredients, cover pot and leave it for 30 minutes.
2. Meanwhile, spray potatoes with vegetable oil and fry using PHILIPS AIRFRYER for 15 minutes on 180°C. Place them in a pot.
3. In a small pan, fry garlic for a minute, add coriander and fry for another minute. Set aside.
4. Now using a strainer, pour chicken stock over fried potatoes till all covered.  Cut chicken into bite size pieces and add them too. Add garlic/coriander mix and stir. Taste and adjust salt & pepper.
Serve it beside some fried rice… sahtainJ

Crispy Spinach Pastries


I can still remember that moment when I’m back from school and baking aromas are all over the place! Oh heaven mama is baking! And of course those crunchy little triangles, filled with succulent spinach & onions are the heroes of the day… perfect! Regardless of all my mother’s attempts to make me eat spinach stew, and all the poppey stories and myths told… this was the only way for me to eat spinach!!

Of course there are many ways to prepare those very famous middle eastern pastries… this remains my favorite… the dough’s crunchiness takes it to a whole different level! And since my mom was born and raised in Lebanon, many of her dishes are a fusion of Palestinian and Lebanese… and I love that:)
For the dough:
2 ½  cups all-purpose flour
1 tbsp active dry yeast
1 cup warm water
1 tsp sugar
1 teaspoon salt
1/3 cup vegetable oil
3 tbsp olive oil
For the filling:
1 kg fresh spinach, well washed
1 medium onion, peeled
3 tablespoons olive oil
1 tablespoon sumac
Juice of ½ lemon
Roasted pine nuts
Salt & pepper to taste

1. Proof the yeast by dissolving it in ¼ cup warm water with the sugar. Leave it to activate for about 15 minutes.
2. Fitting the hook in PHILIPS AVANCE KITCHEN MACHINE, place salt and flour, add the oil and proofed yeast mixture. Knead, add warm water gradually. knead till dough is soft(about 7 minutes).
3. Place dough in a clean bowl that is lightly greased. Cover with cling film and let rise in a warm place for an hour and a half.
4. Mean while we can prepare our filling. Using our PHILIPS Onionchef, chop the onion. Sprinkle onions with salt and set aside for 30 minutes. Chop spinach in small shreds including the stems. Sprinkle with salt and leave for 30 minutes; then squeeze to get rid of extra water and transfer to a bowl; add olive oil, sumac, and mix. Squeeze the onions dry and add them to the spinach along with the pine nuts and mix well. Add lemon juice, salt & pepper right before shaping the fatayer.
5. Preheat oven at 200°C. Roll half of the dough on a greased surface as thin as possible. Cut dough into 10 cm circles. Put one table spoon of the filling in the centre of each circle. Lift the dough and pinch 2 ends first and then the third to form a pyramid, Close the dough firmly.
6.  Place them on a greased baking tray, brush them with olive oil and bake for 18~20 minutes or until the top and bottoms are golden. Enjoy them with a squeeze of lemon and some yogurt… sahtain

Hot & Spicy Shrimps…الربيان الحارّ


Last month marked the anniversary of teta’s(grandmother) passing away! It’s amazing how most of my childhood memories are related in one way or another to teta! and it wasn’t only because she was so kind, caring and sweet(just like all grandmas)… but because she was a strong woman! And I adore strong women! She was able to stand against the hard circumstances after Nakba, when she and her whole family and friends were expelled from their own homes in Acre- Plaestine and fled mainly to Beirut Lebanon! She was a very creative fashion designer… so she opened her own atelier and she was able to support all family members around! RIP teta… I love you!
Teta wasn’t only a talented designer! She was a great cook too! Although she couldn’t stand garlic! She used to have headaches if she smells it! I remember I was like that when I was little! Now I cant live without it!:)  Although this recipe was spicy and I was only 10 when I first tasted it, I just couldn’t stop! And I asked my mama to make it the way “teta” makes  it… and now I make it to my little monsters… a little mild though! This dish brings back beautiful memories of family big gatherings over seafood feasts!

When I was first introduced to Philips onionchef  I thought it was just another onion chopper…  OH MY OH MY!! Its and amazing appliance that I use on daily basis! What and amazing revolutionary little machine! I truly recommend having one…  very convenient in size and price… cooking time just shrinks tremendously! And its dishwasher friendlyJJJ

1kg medium sized shrimps, Peeled and deveined leaving the tails on

½ cup lemon juice

1 bunch of coriander fresh green leaves

8 cloves of garlic

3 red chili peppers(or as per your preference)

A good drizzle of extra virgin olive oil

Salt and pepper to taste

 

1. To prepare the marinade: combine lemon juice, coriander, garlic, chilies, olive oil, salt & pepper all together in Philips onionchef, process till mixture is consistent. Taste and adjust salt & pepper.
2. Marinate shrimps in half the amount of our amazing lemony mixture for half an hour.
3. Preheat oven to 200°C , line a baking tray with parchment paper.
4. Place marinated shrimps in the baking tray, spread them in one layer. Roast for 10 minutes, just until pink and firm.
Enjoy it dipped with the rest of the marinade, wrapped with fresh Arabic pita bread.
الشهر الماضي كانت سنوية ستي الله يرحمها! مش معقول كيف معظم ذكرياتي أيام الطفولة مرتبطة بطريقة أو بأخرى بتيتا!! وبصراحة مش بس عشانها كانت اتدلعنا وتحبنا(زي كل التيتات)... بس لإنها كانت مرأة قيادية وقوية!!! وأنا بحب الست القوية!! وقت النكبة في فلسطين... لما هية وكل عيلتها وجيرانها تهجروا من بيوتهم بعكا-فلسطين وراحوا لبيروت! كانت مصممة أزياء وخياطة مبدعة... مع كل الظروف اللي كانت فتحت مشغلها ووظفت معها أكتر من ١٥ خياطة... مش بس حققت حلمها، هية فتحت بيتها وبيوت كتير ناس من العيلة! بيوم المرأة العالمي... انتي ملعمتي... الله يرحمك! 

تيتا ما كانت فنانة خياطة بس! كانت كمان طباخة ماهرة! مع انها ما كانت اتطيق ريحة التوم!!! ولا كانت تستعمله بأكلها! طبعاً المكون الرئسيس لكل طبيخي!!!! وصفة اليوم مع انها مفروض حراقة، بس من أول مرة دقتها عندها أنا وصفيرة وأنا عندي إدمان!  طبعاً كنت دايماً أطلبها من أمي... وهلق بعملها لولادي (مع تخفيف الحر)! هاي الوصفة بتذكرني بلمات العيلة الحلوة على ولائم السمك اللي كانت تنعمل باستمرار:)

أول مرة استعملت philips onionchef فكرتها مكينة بصل عادية... بس لاااااااا صراحة تفوقت على كل شي تاني!! أنا شخصياً بستعملها كل يوم!!! يعني تصميمها... حجمها... تقنيتها حتى ألوانها لزيزة... وسعرها مقبول يعني بصراحة استثمار بمحله أنصح فيها وبشدة... بتسهل الطبخ وبتختصر وقت، وأهم شي بتنحط بالجلاية؛) 

لهالوصفة رح نحتاج: 
١ ك قريدس(ربيان)، مقشر ومنظف مع الإبقاء على الذيل
١/٢ كوب عصير ليمون
١ ضمة كزبرة 
٨ فصوص ثوم 
٣ قرون فلفل أحمر حر(أو حسب الذوق)
زيت زيتون
ملح وفلفل حسب الذوق

١. لتحضير التتبيلة: نضع عصير الليمون، الكزبرة، الثوم، الفلفل، زيت الزيتون والملح والفلفل معاً في Philips Onionchef, ونخلط حتى يصبح المزيج متجانساً. نذوق ونعدل الملح والفلفل.
٢. نتبّل الربيان بنصف كمية التتبيلة، لمدة نصف ساعة. 
٣. نشغل الفرن على حرارة ٢٠٠ مئوي، نضع ورق زبدة في صينية الفرن. 
٤. نوزع كمية الربيان في الصينية بحيث لا يكون متراكماً. نشويه في الفرن الحامي لمدة ١٠ دقائق، أو حتى يتغير لونه للوردي. 

نستمتع بالمذاق البحري الحامض العطري، مغمساً بما تبقى من التتبيلة، وملفوفاً بالخبز العربي الشهي:)

Carrots’ Soup…شوربة الجزر


Oh Gosh February is finally over! Although it carried lots of happy moments, but seriously one day makes difference in this odd month!  The month of love! And that has nothing to do with valentines! it’s because it holds our engagement anniversary:) it marked the beginning of our life together! I remember that right after the family celebration we immediately started on looking for a nice house, furniture, planning for the wedding day… and of course I started learning some cooking recipes!:)

Marriage is all about connecting two families together… extending your circle of love… beside creating an new fresh on… one of your own! I’m so grateful to have my in-laws in my life as I truly treasure the fact that they consider me as a  new daughter, and I consider them as my own blood too:)
This special recipe that I took from my mother in-law was one of the first recipes I made myself in our new love nest:) it reminds me of Ramadhan and family gatherings during the cold winter in Amman… when a bowl of soup is the hero of the day… this aromatic soup will not only warm your body, but your soul too:)! It’s healthy and so easy to prepare… and with Philips food processor the job was even easier!

2 tbsp vegetable oil

1 small onion, chopped
3 cloves of garlic, crushed
A knob of fresh ginger, crushed
2 cups of diced carrots
3 cups chicken broth
Salt & pepper to taste
Cooking  cream drizzle (optional)
Pumpkin seeds to garnish

1.  In a medium sauce pan and over medium high heat, sauté onions till transparent. Add garlic and ginger and mix for one more minute.
2.  Add carrots, mix till all fragrant and well incorporated.
3.  Add chicken broth, salt and pepper and leave to cook till carrots are tender. Set aside to cool for a while.
4.  Pour the mixture into PHILIPS AVANCE FOOD PROCESSOR, and process till you get a consistent blend.
5.  Return it back to pan to warm it up. Pour it in soup bowls. Drizzle cream on top and garnish with pumpkin seeds.

 
وأخيراً خلص شهر اتنين(فبراير)! ومع انه كان فيه كتير من المناسبات الحلوة، بس جد كتير بيفرق هاليوم التسعة وعشرين بهالشهر العجيب!!! من المناسبات اللزيزة بهاشهر عرس اختي وعيد ميلادها:) وذكرى خطبتي!!:) أول المشوار مع بعض أنا وريموس! بتذكر بهاليوم وبعد الإحتفال العائلي مباشرة بلشنا باللف عالبيوت والعفش وتفاصيل العرس و و و ، وبلشت أتعلم أكم من وصفة للزمن!!:) 

الزواج مش بس اتنين بتجوزوا وبيكونوا عيلة جديدة! الزواج تواصل وتعارف بين عيلتين ... هوة عيلة جديدة وكبيرة:) الحمدلله على بيت حماي اللي بعتبرهم عيلتي اللي من دمي... وهمة بيعتبروني بنتهم:) 

وصفة الشوربة اليوم تعلمتها من حماتي... وهية من أول الوصفات اللي عملتها ببيتي الجديد:) بتذكرني برمضان ولمة العيلة بجو عمان البارد، اللي بيكون فيه صحن الشوربة هوة البطل... هاي الشوربة بتدفي الجسم والروح! صحية وسهلة كتير، ومع محضرة طعام ممتازة زي فيليبس كان تحضيرها ولا أسرع! 

رح نحتاج بهالوصفة: 
٢ ملعقة طعام زيت نباتي
١ بصلة صغيرة، مفرومة
٣ فصوص ثوم، مدقوقين
اصبع صغير من الزنجبيل الطازج، مدقوق
٢ كوب من الجزر المقطع
٣ أكواب من مرق الدجاج
ملح وفلفل حسب الذوق
كريمة(اختياري)
بذور اليقطين للتزيين

١. في قدر متوسط على النار، وعلى حرارة متوسطة، نقلّب البصل حتى يذبل. نضيف الثوم والزنجبيل ونقلّب لدقيقة إضافية.
٢. نضيف الجزر، ونقلّب لتمتزج النكهات. 
٣. نضيف مرق الدجاج، الملح والفلفل، نتركها على النار حتى ينضج الجزر. نرفعها عن النار ونتركها لتبرد قليلاً. 
٤. نضع الشوربة في محضرة الطعام، ونخلط حتى يصبح المزيج متجانساً. 
٥. نعيد الشوربة إلى القدر ونسخنها. نقدمها مع بعض الكريمة على الوجه ومزينة ببذور اليقطين... وصحتين
